Preheat the oven to 200C
1 head cauliflower, separated into florets
Juice of one lemon
Salt and pepper
Place cauliflower in a roasting dish, squeeze the lemon over and drop the halves in. Drizzle generously with olive oil. Sprinkle with flakes of sea salt and freshly cracked black pepper. Roast for about half an hour until the cauliflower acquires crisp, brown edges.
