Roasted Cauliflower

This extremely simple recipe does marvelous things to cauliflower. It obtains a certain meatiness from roasting that makes it immensely satisfying.

Preheat the oven to 200C


1 head cauliflower, separated into florets

Juice of one lemon

Olive oil

Salt and pepper


Place cauliflower in a roasting dish, squeeze the lemon over and drop the halves in. Drizzle generously with olive oil. Sprinkle with flakes of sea salt and freshly cracked black pepper. Roast for about half an hour until the cauliflower acquires crisp, brown edges.

    I just made this for dinner (student budget). I normally don’t like cauliflower unless it is prepared in a curried fashion or a couple of Lebanese styles I’ve had but this sounded so simple and good. It was delish. Farmer’s market cauliflower and fresh lemon. Ab fab! Thanks Tim.
